Chef Sam “SammyD” DeMarco grew up with the aroma of his Sicilian nonna’s red sauce simmering on the stove of his family home in Brooklyn. Serving and sharing food has been at the centre of his life ever since. In 1994, he opened his first restaurant in New York City, which soon became a late-night hangout for other chefs who popped in to enjoy SammyD’s refined takes on comfort food. A graduate of New York Institute of Technology’s culinary school, SammyD has cooked alongside chefs such as David Burke and Gray Kunz. Since relocating with his family to Amsterdam to open Wyers, he says he can feel the city’s influence on his style. “This is the most European American food I’ve ever cooked,” he says. “It’s an honour to be a part of the culinary scene in Amsterdam, and the expansion of Kimpton Hotels & Restaurants in Europe.”
